BLEND STORY
Corcavado is a famous folk tune written by Antonio Carlos Jobim, a Brazilian composer. The first five lyrics are “Quiet nights and quiet stars, quiet chords from my guitar” which we feel encapsulates this quiet but high achieving coffee.
It has no up front acidity and as an espresso portrays strong earthy, buttery and sweet flavours with pungent strength and enormous body. However “Corcavado” really comes to its forte complemented through milk. Like a piece of homemade shortbread, there are fantastic notes of chocolate, caramel, toffee, malt and butterscotch which delight the palate.
RECIPE
Using 19g in 20g VST basket extract 38g espresso in 28-30 seconds. Overwhelmingly sweet, balanced and nuanced with milk. Serve a single shot latte or flat white. For a stronger beverage we recommend using 20g with a 44-46g (long shot) extraction in around 33-35 seconds. Powerfully strong tasting coffee cutting through the milk with delicious flavours akin to malt and butterscotch.
